Top the smoky heat of our Black Pepper Crackers with guac or hummus, plus terrifically tangy loops of pickled red onion.
Ingredients
1 medium red onion
¼ cup white vinegar
¼ cup apple cider vinegar
½ cup water
1 ½ tsp salt
1 ½ tbsp honey
1 tsp mustard seeds (optional)
One-pint, food-safe glass jar with lid
Preparation
Cut the onion into thin slices. Loosely pack the slices into the clean, dry jar. In a small saucepan, add the water, white vinegar, apple cider vinegar, salt, honey and mustard seeds. Over medium heat, let the mixture simmer for a few minutes. Remove from heat. Carefully pour the warm liquid into the jar until the onion slices are submerged. Close the lid and shake gently. Let cool to room temperature and sit for about 30 minutes before enjoying. Refrigerate any leftovers in the closed jar.
