This robustly refreshing Peanut-Free Chilled Pad Thai Salad is made with our Super Seed Jalapeño Crackers for the perfect crunch!
Ingredients
For the salad:
1 pkg Lotus Foods Pad Thai Rice Noodles
2 cups purple cabbage
½ cup sliced red bell pepper
½ cup sliced yellow bell pepper
1 cup shredded carrots
2 green onions, sliced
For the dressing:
⅓ cup fresh cilantro
½ cup sunflower seed butter
1 tbsp each of: lime juice, soy sauce, rice wine vinegar, sriracha, honey
1 tsp sesame oil
½ tsp salt
For garnish:
1 handful of Super Seed Jalapeño Crackers, crumbled
2 tbsp chopped cilantro
Preparation
Place noodles in a large bowl. Add boiling water until the noodles are submerged. Stir consistently for 5-7 minutes until thoroughly cooked. Drain and rinse with cold water. Place in the refrigerator to chill. In a small bowl, add dressing ingredients and stir until smooth and creamy. If thinning is needed, add water and/or more lime juice. In a large bowl, mix the salad ingredients and cold noodles. Drizzle with dressing. Toss until well-coated. Garnish with crumbled crackers and chopped cilantro.
