Ingredients
2 lbs ripe tomatoes, seeds removed (cored) and chopped, juice reserved
1 cucumber, seeded and chopped
1 small red bell pepper, cored and chopped
1 small red onion (or ½ large onion), minced
1 jalapeño or Anaheim chili (optional)
2 cloves garlic, minced
Juice from 1 lime
2 tsp vinegar of choice (sherry, balsamic, champagne)
½ cup olive oil
Salt & pepper, to taste (white pepper, optional)
Cilantro for garnish

Preparation
With a blender (preferred) or food processor, blend tomatoes, cucumber, bell pepper, onion, jalapeño and garlic on high until smooth, scraping down the sides to incorporate. While blending, add lime juice, vinegar and 1-2 teaspoons of salt (to taste). Slowly add the oil while blending. The consistency should become creamy. Strain and chill 2 hours or overnight (preferable). Taste and season with more salt and pepper. Garnish with cilantro. Serve chilled along with Olive Oil & Cracked Black Pepper REAL THIN Crackers.
